Vegetable Khichidi Recipe
Ingredients to prepare Vegetable Khichidi:
Rice | 2 cup |
Moong dal | 1/2 cup |
Beans | 1/2 cup |
Peas | 1/4 cup |
Onions | 1/4 cup |
Potatoes | 1/4 cup |
Spinach | 1 cup |
Ginger | ½ inch |
Green chillies | 2 |
Cumin seeds | 2 tea spoons |
Mustard seeds | 1 tea spoon |
Black pepper | 2 tea spoons |
Red chillies | 2 |
Coriander | 2 table spoons |
Salt | to taste |
Ghee | 2 table spoons |
Vegetable Khichidi preparation method :
Peel and chop potatoes into small cubes, chop beans, onions, spinach, and coriander finely.
Slit green chillies vertically, finely chop the ginger.
Wash the rice and moong dal and place in a pressure cooker,add peas, beans, potatoes, onions and spinach. Add 6 1/2 cups water, and salt also.
Heat the ghee in a small pan, add cumin seeds, mustard seeds, and pepper and fry. Add the green chillies, red chillies and chopped ginger and fry for a few seconds.
Pour this seasoning over the rice and vegetables in the cooker. Add the cilantro and stir well.
Place the cooker on flame and cook the vegetable khichidi in the pressure cooker for 3-4 whistles.
When the pressure settles down, mix well and remove the vegetable khichidi into serving dish.
Now the Vegetable Khichidi is ready to serve.
Serve hot, with a pickle of your choice, ghee and pappads.
