Spicy Tomato Semolina Recipe

Ingredients to prepare Spicy Tomato Semolina:
Ghee/ butter | 4 table spoons |
Semolina | 1 cup |
Mustard seeds | 1 tea spoon |
Cumin seeds | 1 tea spoon |
Curry leaves | 1 sprig |
Ginger chopped | 1 teaspoon |
Green chillies | 4 |
Onions | 2 |
Tomatoes | 2 |
Coriander leaves | 4 table spoons |
Grated coconut | 4 tablespoons |
Hot water | 4 table spoons |
Salt | to taste |
Fried cashew nuts | to garnish |
Spicy Tomato Semolina preparation method :
Chop tomato, onion, green chillies, ginger and coriander and keep aside.
Heat the half amount of ghee or butter in a pan, fry semolina to a golden color on medium flame stirring continuously and keep aside.
Heat the remaining ghee or butter in a pan, add mustard seeds, cumin seeds, curry leaves, ginger, green chillies and onions.
Stir fry on medium flame till the onions become transparent.
Add tomatoes and fry till tomatoes are soft and cooked.
Add half of the coriander leaves, mix and add the semolina and salt.
Add the hot water and mix well.
Cover and cook on low heat for about till the mixture is almost dry.
Garnish with fried cashew nuts, grated coconut and finely chopped coriander leaves.
Now the Spicy tomato Semolina or Tomato Rava upma is ready to serve.
Serve hot with Coconut Chutney.
