Coconut Rice Recipe
Coconut rice or kobbari annam recipe is a traditional south Indian rice recipe. In this recipe the rice is flavored with the fresh coconut and other spices.
Kobbari Annam Recipe
Ingredients for Kobbari Annam
Basmathi Rice – 1 Cup
Fresh Grated Coconut – 1/2 Cup
Coconut Milk – 1/2 Cup
Green Chillies – 8
Mustard Seeds – 1 tsp
Cashews (divided) – 10 no
Chanadal – 1 Tbsp
Urad Dal – 1 Tbsp
Asafoetida (hing) – 1/8 tsp
Dry Red Chilli – 3 no
Salt – to taste
Coconut oil – 1 Tbsp
Water – 1 Cup
Kobbari Annam Preparation :
First take basmati rice, wash, drain, soak in fresh water for 30 minutes.
Pressure Cook the soaked basmati rice with fresh water and coconut milk for one whistle, lower the flame and cook for more 5 mins.
Once the pressure is gone, cool the rice by spreading it in a wide bowl or a plate.
Heat oil in pan, add mustard seeds and allow to pop.
Add Chanadal, urad dal, dry red chillies, fry to golden add the cashews and fry till golden.
Add in green chillies, curry leaves and salt and cooked rice mix well and turn off the heat.
