This healthy-choice cake combines whole wheat flour, oats and apples.
Serves 10-12
1 cup oats – grind to a powder in a mixer
¾ wheat flour (atta)
2 tsp cinnamon powder (dalchini powder)
2 tsp baking powder
1 tsp soda-bi-carb (mitha soda)
5 tbsp softened butter
1 cup powdered sugar
4egg whites
½ – ¾ cup (approx.) milk
1 tsp vanilla essence
2 apples – peeled, cored and chopped (3 cups)
TOPPING
¼ cup brown sugar
1 tbsp oats
1 tbsp wheat flour, I tsp cinnamon powder
Mix all the ingredients of topping together in a bowl. Keep aside.
Sieve wheat flour, cinnamon powder, baking powder and soda-bi-carb together.
Beat butter and sugar till creamy. Add egg whites and mix well.
Gradually add flour in it. Add 1/2 cup milk. Mix well.
Now put oat powder, vanilla essence and fold in 2 cups apples, keeping aside 1 cup for the top. If the mixture appears very thick, add some milk to get a soft dropping consistency.
Grease a 9” round cake tin with oil. Sprinkle flour to dust it. Transfer the batter in the greased and dusted tin.
Spread 1 cup apples over the batter.
Sprinkle the topping all over the apples.
Bake in a pre-heated oven at 180°C for 40-45 minutes.
